Recently, my husband and I have been trying the Paleo diet. This is the eating plan where you take out carbohydrates and sugars and basically eat like a caveman. We haven’t been extremely strict with it, but just trying to minimize the carbs and processed sugars we eat day to day.
With the new diet, I had to come up with some new busy morning breakfast ideas. I was searching Paleo recipes to give me ideas and I found some for crust-less quiches. These are super simple to make and quite filling. Now all I have to do in the morning is microwave it for about 20 seconds and I’m out the door.
Egg Tarts – Serves 6, Cook Time – 30 minutes
8 eggs
2 breakfast sausage links, sliced into bite size pieces
chives, minced
salt and pepper
cheddar cheese
tomato, sliced
Liberally grease six spots of a muffin tin. In a large liquid measuring cup, add eggs, a splash of water, salt, and pepper. Whisk until eggs are broken up. Mix in the chives and pour into the muffin tins leaving about a 1/2 inch space at the top.
Put the sausage pieces into the egg mixture and then top with a bit of cheese.
Place in a 350 ° oven for 15-20 minutes or until the centers have firmed slightly. About 5-7 minutes before the end of the baking time, place a tomato slice on each tart. To remove the tarts, it helps to go around the edge and bottom with a rubber spatula.
