Whether you are looking for a great snack, something new for breakfast, or a healthier dessert, this Coconut Chia Pudding is delicious. With no carbs and only natural sugars, this pudding packs a lot of flavor and texture. It is also great on its own or adding fresh fruit, chopped nuts, or toasted coconut.
If you aren’t a big fan of the texture of chia seeds, you can blend everything in a blender for a smooth pudding. This way you are still getting the nutritional benefits of the chia seeds (like high protein, fiber and Omega-3), but not the unique texture.
Chia Pudding – Makes 2 cups, Cook Time – 10 minutes, Refrigerate 4 hours
2 cups coconut milk
1/2 cup chia seeds
1/2 teaspoon vanilla
1/4 cup maple syrup
Combine all the ingredients together and whisk until everything is incorporated. Cover the mixture and refrigerate for at least 4 hours before serving, this lets the chia seeds absorb the milk and causes the pudding to naturally thicken. Top with toasted coconut, mango, strawberries, or kiwi!
