A couple months ago I posted a recipe for a Blue Cheese and Date Salad with a warm Bacon Vinaigrette. I got the idea for that salad from this recipe for Bacon Wrapped Dates stuffed with Blue Cheese.
With the holiday season now upon us, we will be going to parties and hosting parties ourselves and with that we’ll be looking for a crowd-pleasing appetizer. This is just the thing. It’s simple to put together and everyone loves anything wrapped in bacon.
This delectable mouthful has everything you could ask for in a bite of food. Sweetness from the dates, savory and salty bacon, and a creamy tang from the blue cheese. Even if you’re not a huge fan of blue cheese, give this a shot. You might find that by balancing out the strong flavor of the cheese with sweet and salty makes you like blue cheese just a little bit more. I find that to be true for myself.
For this recipe I used Medjool dates because they are slightly bigger and better for stuffing with cheese and are easy to find at the grocery store. As for the cheese, I just used a blue cheese crumble that I get at Aldi. Any kind will do, so use what you like. If you want a milder blue cheese, look for less spots of blue and a softer, creamier texture.
Bacon Wrapped Dates Stuffed with Blue Cheese – Cook Time – 45 minutes

Preheat the oven to 400 and line a baking pan with parchment or aluminum foil and grease with cooking spray.
If your dates are not pitted, slice them down the side and remove the pit. Stuff about a teaspoon, or as much as you can, of blue cheese into the date.
Wrap a half slice of bacon around the date. Place the dates on the baking pan with the end of the bacon face down. The bacon stays in place pretty well, but you can secure it with a toothpick if you would like. Continue the process until you have enough dates for the number of people.
Bake the dates for 15-20 minutes until the bacon is crispy. Cool slightly before serving.

These look delicious! We made bacon wrapped dates stuffed with honey goat cheese (from aldi!) last weekend and they were great. I bet the blue cheese would be even better! Can’t wait to try it!
