When it comes to thinking of what to make for dinner, it’s so easy think of recipes with chicken or ground beef. These proteins are versatile and easy to use. For me, it’s more challenging to think of new ways to use fish, especially salmon.
But, with salmon being so healthy, it’s definitely worth trying out new recipes. Here is a pretty fast and easy recipe for baked salmon with a creamy sauce. The quick cooking nature of fish is an added bonus for a busy weeknight dinner. I cooked this salmon in the oven because I was cooking a large fillet, but you could easily cook it on the stove to reduce cooking time.
I served my salmon with rice pilaf and sautéed green beans. Here’s to trying to bring a little more fish into our diets!
Salmon with Creamy Basil Sauce – Serves 4, Total Time: 30-40 minutes
For the Salmon:
4 salmon fillets
Salt & Pepper
Creamy Basil Sauce:
2 tablespoons cream
3 oz. cream cheese
1 Roma tomato, roughly chopped
1 garlic clove, chopped
9 basil leaves, chopped
2 tablespoons lemon juice
Salt & Pepper
Preheat the oven to 450° F. Meanwhile, coat the salmon in olive oil and season with salt and pepper. Bake for 15-20 minutes until the fish is firm and begins to flake. If using a meat thermometer, it should have an internal temperature of 140° F.
For the sauce, put all the ingredients into the blender jar and puree until smooth. Taste the sauce for salt. If it is too thick, add more lemon juice or a bit of water. Put the sauce into a small saucepan and warm over medium heat.
To serve, spoon the sauce over the salmon and garnish with some thinly sliced basil.
