Fried rice is a great weeknight meal because it’s fast to cook and you can pretty much use whatever is in your fridge. For this recipe I used peas, corn, and ham, but feel free to substitute with what you have on hand. Chicken, carrots, shrimp, or pineapple. So many possibilities!
