Jicama is root vegetable popular in Mexico, Central America, and the Caribbean. It has a texture similar to raw potato, but tastes a bit like an apple.
To use jicama, peel with a vegetable peeler and then use either raw or cooked. Good uses for it raw is a slaw, salad, or even on its own sprinkled with chili powder, salt, and lime juice. A popular use now is in a jicama and watermelon salad.
