Surprisingly, it’s easier to pickle foods than you might realize. There are different ways to do this, but here is a quite easy way. All you need are a few simple ingredients and an airtight glass jar.

Ingredients
- 3 cups white vinegar
- 1 1/2 cups water
- 6 tablespoons sugar
- 6 tablespoons kosher or pickling salt
- 2-4 medium white, red, or vidalia onions julienne into 1/4 inch slices
- garlic, carrots, jalapenos, bay leaves, peppercorns optional

- In a medium saucepan, bring vinegar, water, sugar, and salt to a simmer. Stirring to ensure the sugar and salt are dissolved.
- Pack the onions (and other optional ingredients, if desired) into a canning jar or glass jar with airtight lid.
- Pour the hot liquid over the onions filling the jar to the top.
- Cover and let sit until cool. Once cooled, store in the refrigerator for a week and then enjoy on tacos, soups, burgers, and more!
